Across eight wines in two distinct brackets, you’ll follow Pepper Tree Shiraz from four of Australia’s most diverse wine regions — Hunter Valley, Orange, Wrattonbully and Barossa — each with their own terroir and character — before stepping back through four vintages of our flagship Coquun Hunter Valley Shiraz, including rare museum releases.

Shiraz — Terroir & Time is a premium guided experience that takes you inside one of Australia’s most expressive varieties — through the lens of place, and through the lens of time.

It begins with a story that took decades to build.

Pepper Tree’s owner and vigneron John Davis has spent his career finding the right soils for the right grapes. With a geology background and a quiet determination, he planted vineyards in four of Australia’s most distinct wine regions — Hunter Valley, Orange, Wrattonbully and Barossa. Each region has its own soils, climate and conditions. Each one shapes Shiraz in an entirely different way. Those vineyards, and what the land around them does to a grape, are at the heart of this experience.

Running daily at 11am throughout May and June, the tasting is held in a private setting at Pepper Tree, away from the cellar door, capped at just 12 guests.

Bracket One: Terroir

Four Shiraz, four regions, four entirely different expressions. From Pepper Tree vineyards in the Hunter Valley, Orange, Wrattonbully and Barossa — each region brings its own distinct terroir to the variety. Ancient alluvial sands, cool high-altitude soils, ancient limestone country, warm valley floor. The climate, the soil, the aspect — all of it finds its way into the glass. This bracket is about understanding what terroir actually means, across four clear and compelling examples.

Bracket Two: Time

The second bracket turns the lens to our flagship Hunter Valley Shiraz, Coquun. Four vintages — 2022, 2019, 2013 and 2011 — follow a single wine across seasons and years. The 2013 and 2011 are museum releases, rarely poured. Here you see what patience does — how a great Hunter Shiraz develops, shifts and deepens with time in the bottle. It’s a rare opportunity to taste the same wine across more than a decade.

A simple, well-matched, and chosen cheese will compliment the tasting to let the wine lead.

Pepper Tree Wines is a pet friendly venue as well as having a large grassed area and designated 'kid zone' for children to play.

For most experiences we prefer bookings but also happily greet and seat walk-ins when available.

Please note tasting fees are NON-REFUNDABLE - they are to cover the tasting experience.

Bookings cancelled within 24 hours prior to visit are non refundable.
